MM ESC and voltage + other questions :D -

Hi guys,
I'm sure these questions have been asked and answered a few times before, but I can't seem to find definitive answers so I'm just going to ask them all in once place :D
I'm in the process of gathering bits and pieces together to convert my Revo to brushless.
With regard to the Mamba Max ESC, what sort of voltages can I run without frying it? I was considering a 5S A123 pack with a 7XL motor, but if the voltage is too high, I guess I'd have to go down to a 4S pack.
I've seen a lot of comments about adding more or better "caps" which I assume are capacitors? If so, which ones (or what rating) should I get, and how does one attach them? Do I replace the ones on the ESC, or add them somewhere else?
I will be running an external BEC also, but is there a rule of thumb to follow here, ie anything over 3S you need a BEC for?
I've also seen the big MMM thread. The MMM stands for Monster Mamba Max? What are the specs for this beast and have there been any updates on the availability of it?
