Oversteer in real cars seems to be fixed by adding downforce to the rear, to make the front end lighter and less likely to spin out.

Understear is fixed by maybe stiffening up the rear suspension so the nose doesnt lift so much when you're on the power- more weight upfront too yeah.

Heavier fluid in the front diff tends to make the steering more snappy from what I gather, gives it more bite into corners.
