I think your mind set is on internal combustion engines. Brushless motors speed is determined by it's kv and voltage that it is being fed. Maybe some motors might be a bit slower to spool up but they should theoretically still reach their kv X Voltage speed. (unless the motor is way under powered or battery voltage drops under load) At least that is my understanding of it. Happy to be corrected though.
IMO if you are just going to do a single speed run/pass and then let the car cool down then you should be able to go with 4S. I thought that the Castle 14xx series was rated for 100,000rpm. Isn't it? If you do go that way then you really want to make sure your batts and ESC are up to the task. All depends how fast you want to go. The faster you want to go the more you will be risking.
