Its easy. I actually think its easier than the old sub-c packs that I used to make. Especially if you get the copper tabbed cells that are available now days. very easy to solder. the only problem is a mistake is more costly and dangerous. If you accidentally short a cell or the pack while wring it up you will probably ruin the cell or cells that shorted. even if they don't puff up right away they wont last as long after that.
Just be careful, think before you actually touch connectors together and keep any tabs or uninsulated wire ends that you are not working on at that moment covered with a quick wrap of electrical tape for safty, and you should be fine.
